| It is interesting to talk about the local cuisine of St. John. I have lived here for over two years but really it is a true melting pot of culture and food. There is a very strong asian influence here using earthy spices a lot like cinnamon, allspice, nutmeg, and mace. Obviously, fresh fish like wahoo, mahi mahi, grouper, and tuna are popular. Lobster can be caught locally and they very popular but tourism is so high that the demand for lobster exceeds the supply so many are shipped in from other areas. Josephine's famous Coral Bay farm supplies many restaurants with fresh micro greens and greens with a very strong Asian influence like Bok Choy and Thai Basil. Another influence is the fruits that grow locally like mango, papaya, sour sop, coconut, breadfruit, citrus fruits, and bananas. Many root vegetables are very important in the West Indian culture like casava(yucca), local yams(not the orange American sweet potato!), and many other starches that are used for much more than cooking. An interesting little fruit is the guinep, it is almost all one large seed and the size of a key lime but it has a nice tart taste. You wouldn't think this small island in the middle of the Caribbean has so much to offer in terms of cuisine but it feels as though St. John has it's own unique flavor. | |
